Ingredients

  • 450 gr shelled broad beans
  • 250 gr pea pods
  • 4 artichokes
  • 1 onion
  • 1 lemon
  • nutmeg
  • extra virgin olive oil
  • mint
  • salt
  • pepper
  • lemon

Instructions

  1. Clean the artichokes well, leaving only the softest part and part of the stems, eliminate the tips with the thorns. Cut them in half and remove the thorny heart. Slice them into wedges and soak them in water acidulated with lemon juice.
  2. In a saucepan heat two tablespoons of oil, season the onion cut into thin slices and when it has become transparent add the well-drained artichokes and, after a few minutes, the beans. Cover with hot water and cook for 10 minutes. Add the peas and cook for about 20 minutes. Add salt and pepper and add the grated nutmeg.
  3. Season with 5/6 mint leaves, a tablespoon of sugar and 2 tablespoons of vinegar. Stir gently and cook for a couple of minutes. Let it cool before serving.
