Pasta and beans is a true classic of Italian cuisine, a recipe of popular economic tradition but tasty and nutritious. Due to its richness, pasta and beans is a healthy single dish perfect for the whole family.

Ingredients

✓ 500 gr of dried borlotti beans
✓ 120 gr fresh maltagliati pasta or razor clams
✓ onion
✓ carrot
✓ celery stalk
✓ 2 tablespoons of tomato sauce
✓ slice of lard
✓ bay leaf
✓ rosemary
✓ extra virgin olive oil
✓ salt
✓ coarse ground black pepper at the moment

Preparation

1 Wash the beans and let them soak for at least 8 hours to rehydrate them and if possible, change the soaking water. Put the beans in a saucepan, cover them with double the water and add 2 bay leaves. Don't salt them because it hardens them and slows their cooking. Cook for 1 hour and a half over a low heat. Drain 1/3 of the now cooked beans and blend in the cream.

2 Soften the chopped onion, carrot and celery in a saucepan with the oil, add the twig of rosemary for a few minutes (the time it gives off its flavor and then remove it) and the lard into cubes. Add the tomato, the bean cream and the drained beans, leaving the bean cooking water aside. Cook over moderate heat for a few minutes, stirring frequently.

3 Using a ladle, add the cooking water from the beans, bring to the boil and add the maltagliati (click here for our recipe). Stir often until the pasta is cooked and, if necessary, add the beans cooking water little by little. Salt and pepper towards the end. Allow to cool for 5 minutes before serving.

4 Serve and garnish with a drizzle of raw oil and freshly ground black pepper.

Notes & Variations

You can use canned beans making pasta and beans a quick dish.
In some regions, such as Veneto and Tuscany, it is customary to add pork rinds to this basic recipe of pasta and beans.
For those who love stronger flavors, 5 minutes before the end of cooking the pasta, add a ½ cup of red wine.
