Spaghetti with meatballs

A simple dish, a dish that for Italian immigrants in America acquired the memory of Sunday lunches and family unity.
✓ 320 gr of large spaghetti
✓ 300 gr of ground beef
✓ 300 gr of minced pork
✓ 2 slices of stale bread
✓ Bread crumbs
✓ 2 eggs
✓ 70 gr Parmesan
✓ 1 glass of milk
✓ 1 luganiga sausage
✓ 500 grams of tomato sauce
✓ ¼ glass of red wine
✓ 1 bunch of parsley
1 Soften the stale bread without edges in the milk. Leave it in a bowl for about ten minutes. Squeeze it very well and place it in a bowl, where you add the minced meat, the eggs, the grated parmesan, the finely chopped parsley, salt, pepper and nutmeg. Mix everything with your hands until you get a soft and homogeneous mixture. If the dough is too soft, add the breadcrumbs.
2 With the hands formed of meatballs of about 6/8 cm in diameter. As soon as all the meatballs are ready, pass them in the breadcrumbs and fry them in a little olive oil over high heat so that they are golden on the surface, inside they must remain raw. Drain the meatballs and set aside.
3 In a saucepan, add the oil, a jacketed clove of garlic and the sausage luganiga in pieces (to which you have previously removed the skin); As soon as the garlic begins to fry, remove it and continue to sauté the sausage for 1 minute. Add the tomato puree, salt and a teaspoon of sugar and cook for 5 minutes until the sauce is reduced a little. Add the meatballs and ¼ glass of red wine to the sauce. Cover with the lid and cook over low heat for about 30 minutes, turning them halfway through cooking.
4 Bring the water to the boil, add salt and pour the pasta, then drain it and place it in serving dishes and add the meatballs with plenty of sauce, serve immediately.

The origin of this dish is probably to be found in the fact that the first Italian immigrants in America, at the beginning of the twentieth century, very poor, could only feed themselves with spaghetti with tomato sauce. And inside this sauce, when they could, they also threw pieces of meat that they could get.
